Chef's Background

Chef C. Jean Denham, CC

a little about me...

My first dinner party, at the age of 20, was made up of recipes I found in the newly released Mastering the Art of French Cooking, by Julia Child, Simone Beck & Louisette Bertholle. After pulling off that feat (sucessfully, whew!), I continued cooking for family, friends and coworkers for another 40 years before entering ACF's Culinary Program sponsored by the American Culinary Federation. After graduating I was appointed to the Board of Directors and spent two years as Apprenticeship Chair for the Capitol City Chef's Association, a chapter of the American Culinary Federation. I continue to be a proud member of the ACF.

Because of mentors, friends and instructors I was lucky enough to have in my life during schooling, I was able to begin my working career in Country Clubs immediately, and on to the job of Chef at Foresthill Lodge Hotel, in Foresthill, California after 3 years in the culinary field.

While still in school, I started my Personal Chef business, a Chef's Journey, cooking for some of the greatest folks in my area; the business eventually morphing into catering work which I was lucky again to be able to continue while working at my other jobs.

Four years ago my husband, Roy, and I sold our 3-acre vineyard/farm in Northern California to relocate and semi-retire in Port Angeles, Washington ~ on the Straits of Juan de Fuca. To keep up my knife skills, I continue to do frequent catering for local wineries and private parties.

Along the way I was a part of a Chef Scholarship Fundraiser Dinner group and cooked with wonderful chefs and cooks from around the country and England. That program sponsored by Chefs4Students is still carrying on these fundraiser dinners and raising monies for scholarships. It was during the time of working with this group that our book, Share a Recipe Cookbook, came into being. The book has already given a $1,000.00 scholarship to a culinary student attending Le Cordon Bleu Culinary school in Las Vega, Nevada.

And now, I'm turning my attention to writing cookbooks and sharing some of the dishes I've cooked over the past 50 + years, with all of you.  I'll be the coordinator of this website, but in all reality it will be your forum for food and cooking you'd like to know more about ~ let me know how you like to cook, and what you enjoy cooking and together, we can cook up a storm and have a great time while we're at it.

                                                                                   take care everyone,
                                                                                            Jean
